Wellness Garden

Come take a self-guided tour and experience the thoughtful design of the new five acre Wellness Garden, and learn about the integral role our adult day employees play in maintaining the garden. See first-hand what produce is available for the community to purchase - eggplant, squash, herbs, tomatoes and more. All items are available in our Country Store. 

Developed and maintained by our Wings program participants, the Wellness Garden provides training and employment opportunities for adults who have developmental disabilities. The Wellness Garden also offers educational opportunities to learn about gardening and healthy eating. 

Our winter spinach is delicious!  

Our winter spinach grows slowly which gives it a thicker, juicier, more flavorful leaf. Purchase our fresh spinach to make this delicious recipe recommended by Rudy! 

Fresh Spinach Salad

Prep: 20 mins   |    Cook: 20 mins   |   Total: 40 mins   |   Servings: 7

In a blender or food processor, combine sugar, vinegar, oil, Worcestershire sauce, ketchup, and process until smooth. Set aside. 

Dressing
1/2 C white sugar
1/2 C white vinegar 
1 C vegetable oil
1/4 cup ketchup
2 TB Worcestershire sauce

Salad
1 small red onion, thinly sliced
5 slices bacon
3 Eggs
1 LB fresh spinach - rinsed, dried, torn into bite-size pieces
1 (4 oz) can sliced water chestnuts, drained 

Step 1: Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.

Step 2: Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let effs stand in hot water for 10-12 minutes. Remove from hot water, cool, peel, and chop. 

Step 3: In a large bowl, toss together the spinach, water chestnuts, bacon, and eggs. Serve with dressing. 

The garden is open for self-guided tours during the hours of our Country Store (Monday-Friday 10a.m. to 6p.m., and Saturday 9a.m. to 4p.m.). Feel free to walk around and enjoy the beauty of our garden, but please resist the urge to pick our wonderful flowers, herbs and produce. These are all available for purchase at the store. 

The Garden is made possible through the generous support of The Samuel and De Ette Dreyer Charitable Trust and The Community Charitable Fund at Stark County Community Foundation, as well as Sisters of Charity Foundation as a part of the Future of Food Security Initiative.  

We are very proud and excited to be a part of the county’s Future of Food Security initiative and to offer these healthy food choices to the community. All proceeds from this project will go to support the mission of Pegasus Farm, providing services to individuals with special needs.
